Honey Chicken With Spring Onions
This is a very unusual recipe for me as I have never used vegemite in cooking before. Being Australian I absolutely love the stuff on toast and thought I would try this to see how it turned out. I thought the vegemite would totally overpower this dish but it just adds a subtle flavour. As my hubby and I are eating lower carb meals in the evenings I served ours with lots of extra vegetables rather than the noodles listed. I added bok choy, carrot, snow peas, shiitake musrooms, red and yellow pepper instead of the green that was listed as I already had a lot of green from the bok choy and snow peas. I made as listed except for adgjusting amounts as I was cooking so many vegetables I had to up the amount of water used, hence adjusted vegemite and honey amount accordingly. Carrot Satay Meatballs (Using Vegemite)

This is a great recipe for peanut butter lovers I made this over the weekend and it was awesome. I had a few family members over for dinner and made a buffet style meal and made this as one of the many dishes. They were very easy to make which I always love, especially when I am making loads of different dishes, I do not want anything time consuming. I served these with a homemade satay sauce which was lovely, but the meatballs are so moist and full of flavour, they are also really great by themselves. As I made this from a Zaar member if you want to see the original recipe or view other recipes by this chef please click here.

Ingredients

250g Minced beef
1/4 Cup crunchy peanut butter
1/4 Cup fresh breadcrumb
1/4 Cup grated carrot
1 Tablespoon tomato sauce
2 Spring onion, finely chopped
1 Teaspoon Vegemite
1 Teaspoon curry powder

Method

1. Combine all ingredients in a large bowl, mix well.

2. Shape into walnut sized balls. (I made mine larger, just preference.)

3. Bake in a shallow, lined baking dish at 200C for 20 minutes or until cooked through.

4. Serve with Satay Sauce.
