Cajun Blackened Salmon
This isn’t one of the people in my recipe swap this month but she has made a couple of my recipes and reviewed them so I figured it was about time to return the favour. When I tasted the spice blend by itself it just about blew my head off, I almost adjusted amounts fearing it would be too spicy. In the end made as is and even though quite strong, when added to the fish it was the perfect balance and we really enjoyed it, but I love quite spicy, so adjust for personal taste. Ingredients

4-6 Salmon fillets (I cooked with skin, personal preference.)
2 Tablespoons butter

CAJUN SPICE

1 Tablespoon paprika
1 Tablespoon salt
1 Tablespoon onion salt
1 Tablespoon garlic powder
1 Tablespoon cayenne pepper
3/4 Tablespoon white pepper
3/4 Tablespoon black pepper
1/2 Tablespoon thyme
1/2 Tablespoon oregano
1/2 Tablespoon sage

Method

1. Mix together spices in an airtight jar and shake until well blended.

2. Sprinkle cajun spice liberally over salmon fillets on both sides.

3. Melt butter in a large pan over medium high heat until sizzling hot.

4. Place salmon fillets in butter and cook each side 4-8 minutes, depending on the size of the fillet. Be sure to cook one whole side before flipping to blacken properly.

I made the spice mixture as stated for two fillets so I could save the rest in an empty spice jar for future use.

Cajun Blackened Salmon with Pureed Peas and Door Stop Fries

Here is a quick, easy recipe that tastes great. You can make Cajun spice by grinding your own herbs and spices, but why fuss when you can buy already blended Cajun spice, that tastes great, I use Schwartz brand and prefer this one to others I have tried.

Ingredients

olive oil
4 Salmon Fillets (about 150g each fillet)
4 Teaspoons Cajun spice (I allow for a teaspoon for each, but add more or less depending on desired spice level, I always use more than a teaspoon on mine. I love Cajun spice.)
1 x 500g Frozen peas
100g Butter
salt and pepper to taste (If using salted butter you won’t need extra salt.)
Potatoes (As many chips as you want… I looovvee big fat chips.)

Method

1. Peel and cut potatoes into very fat chips, heat some oil in a large frying pan and fry chips until cooked and crisp, turning constantly, to brown on all sides. Alternatively fry in a chip fryer if you have one.

2. Coat salmon with Cajun seasoning, heat a small amount of oil in a pan, place salmon skin side down and fry for 4-5 minutes, turn and fry for a further 4-5 Min’s. Cooking times will vary depending on the thickness of the fillet.

3. Bring a large pan of salted water to the boil, add peas and boil for about 5 Min’s. Drain and puree peas with butter, salt and pepper in a food processor or blender.

To serve: Divide puree mix between 4 plates, place salmon on top, and stack chips on top of each other.
