Just recently I saw a Globe Trekker episode on PBS featuring some countries in Northern Africa and decided to search for some local cuisine. This recipe is about an hour away from being done, they look awesome AND my house smells awesome. The best part about braising is it's so simple. I do everything in a 12" lodge cast iron pan with a lid (except couscous or rice). I’m a big fan of lamb shanks and have cooked a number of different recipes over the years.
