I personally  think it is for ease and quickness of making. It takes less time to add a few spoonfuls of peanut butter than grinding nuts.

I have never made it with ground peanuts before but have heard of it being done this way. I will have to look at my local Asian store and see if they sell already ground peanuts and try it this way to see the taste difference. Thanks for the tip on a more authentic sauce:)</description>
